This is an easy dish which you can make in your slow cooker and accompanied with rice or noodles makes a lovely dish that everyone will enjoy!
Ingredients
500g pork loin, cubed
440g pineapple pieces with the juice
A large red bell pepper, chopped
1 onion, quartered
1 carrot, peeled and sliced
1/4 tsp of ginger, grated
3 tbsp brown sugar
60 floz of apple cider vinegar
4 tbsp ketchup
2 tbsp soy sauce
Method
- Put the pork into some flour, seasonsed with salt and pepper and then place into a frying pan over a high heat and sear the pork loin.
- In the slow cooker, put in the brown sugar, ginger, apple cider vinegar, pinapple juice, ketchup and soy sauce.
- Add the pork, red bell peper, carrot, onion, pineapple pieces and stir gently.
- Cook for 6 – 8 hours on low.
- Serve and enjoy.

We served our pork on a bed of special fried rice and our own recipe is below:
Ingredients
250g basmati rice
1 red onion, chopped
1 carrot
1 stick of celery, chopped
100g of peas
250g of bacon lardons
1 clove of garlic
Soy sauce
Method
Boil the basmati in a saucepan.
Put the onion, celery, bacon lardons and garlic into a pan and fry until softened.
Once the basmati rice is ready, put into frying pan and then add soy sauce to taste.
Serve up with slow cooked sweet and sour pork meal.
